Tomato Soup

Ingredients



400g/14oz tin of plum tomatoes
1 tbsp tomato puree
1 garlic clove, crushed
200ml/7fl oz vegetable stock
small handful fresh basil leaves
spoonful of Greek yogurt, to serve


Instructions



1. Heat the tomatoes, tomato puree and garlic in a large saucepan for 2-3 minutes.
2. Pour in the stock and add the basil leaves.
3. Bring to the boil then reduce the heat and simmer for 8-10 minutes.
4. Blend the soup using a hand-held blender until smooth.
5. Ladle the soup into bowls and serve the Greek yogurt on top.
