Pumpkin Soup

Ingredients


2 tablespoons olive oil
3 Carrots

1/2 tsp Curry powder

1 large Onion, diced

675g Pumpkin peeled and diced

500ml Hot Water

Salt and Black Pepper


Instructions


1. Put the Pumpkin, Carrots, Onion, Curry powder and Olive oil in a roasting tin and roast for 40 minutes at 220oC

2. Transfer to saucepan, add the water. Blend with hand blender, season and serve.
