Pea Soup

Ingredients


1 red onion, diced
25g/1oz butter
200g/7oz peas (tinned or frozen, thawed)
300ml chicken or vegetable stock
100ml double cream
2 tbsp parsley, chopped


Instructions




1. Melt the butter in a saucepan. When foaming add the onions and sweat for three minutes.
2. Add the peas and cook for a further four minutes.
3. Add the stock and cream and cook for one minute.
4. Blend the soup in a food processor and serve in a large bowl garnished with the chopped parsley.
