Broccoli Soup

Ingredients


2kg Broccoli, chopped
2 Sticks Celery, thinly sliced
1 Large Onion, thinly sliced
950ml. Water
Salt and White Pepper
50ml. Double Cream


Instructions


1. Put the broccoli in a saucepan together with the celery, onion and water bring to the boil then reduce the heat, partially cover and simmer for 15-20 minutes until the vegetables are very soft.

2. Allow to cool slightly then transfer to a blender or food processor and process until very smooth.

3. Return the soup to the pan, add the cream, season and reheat very gently, stirring constantly and being careful not to allow the soup to boil. Serve hot.
