Spicy Potatoes

Ingredients


5 tbsp vegetable oil
1 tbsp black mustard seeds
1 medium onion, peeled and finely chopped
1 tsp garlic puree
2 tbsp Medium Hot Curry Powder
1 lb (450g) potatoes, boiled and cubed
Salt to taste
Coriander or mint


Instructions



1. Heat oil, fry mustard seeds until they begin to pop, add onion and garlic.

2. Fry mixture until golden brown.

3. Add the curry powder and fry gently for 5 minutes.

4. Add potato and salt, continue frying for 5 minutes. If the potatoes begin to stick, add a little water.

5. Serve garnished with a sprig of coriander ormint.
